Facing the severe challenges of an industry-wide retirement wave and persistent recruitment difficulties in food services, hospital nutrition departments stand at a critical crossroads of transformation. Kaohsiung Municipal Siaogang Hospital (KMUH) has taken the lead by introducing "AI Automated Cooking Machines" and other smart culinary equipment. To demonstrate the initiative, the Superintendent personally donned a chef’s hat to operate the automated machine. The core philosophy of this decision lies in using technology to bridge the staffing gap in hospital food services, stabilize the quality of therapeutic meals, and—most importantly—safeguard the nutrition staff from occupational injuries caused by prolonged physical labor.

Unlike commercial restaurants, hospital kitchens bear a highly specialized responsibility: they must precisely tailor diverse therapeutic diets according to patients' clinical conditions. Data from the KMUH Nutrition Department reveals a severe recruitment bottleneck and high turnover rate over the past year. A team originally structured for 8 personnel was left operating with only 5, leaving head chefs with no rotation options, allowing only one staff member to rest per day, and even forcing a temporary reduction in meal production volume.

Wang Hsin-Ling, a dietitian at the KMUH Nutrition Department, pointed out that traditional kitchen environments are chronically exposed to high temperatures and humidity. Moreover, chefs must work under high pressure, continuously maneuvering heavy woks and spatulas weighing several kilograms, which inflicts severe occupational stress and injuries on their shoulders, necks, and lumbar spines.

Dr. Hung Chih-Hsing, Superintendent of Kaohsiung Municipal Siaogang Hospital, stated that the implementation of AI automated cooking machines delivers three core advantages:

  • Consistent Quality: Through digitized recipe module testing, the machine precisely regulates the heat, cooking time, and seasoning for every dish. This ensures that whether for patient therapeutic diets or staff meals, the quality of food service remains uniform and is no longer compromised by chef turnover or physical fatigue.
  • Enhanced Occupational Safety: The automated tossing and stirring technology eliminates the need for chefs to endure intense heat waves and close-up contact with high-temperature oil fumes and open flames. This drastically reduces the risks of burns and long-term musculoskeletal disorders caused by repetitive manual lifting.
  • Efficiency & Professional Shift: The smart equipment enables simultaneous multitasking, effectively relieving the pressure of labor shortages. It liberates culinary professionals from repetitive, strenuous labor, allowing them to redirect their expertise toward menu innovation and precision nutrition management.

By aiming to reduce workloads through smart technology, Siaogang Hospital successfully translates the optimization of healthcare working conditions into the food service frontline, actively fulfilling President Lai Ching-te's "Healthy Taiwan" vision.
